Yields 6 to 8 servings
To season , you’ll need Chef Earl’s:
- Master Blend Spice ( “MB”)
 - Three Tears Spice Blend ( “TT”)
 - Fiesta Spice Blend (FB)
 - Garlic & Herb Spice Blend ( GH)
 
Ingredients:
- 10 to 12 Jumbo White Shrimp
 - 2 cups elbow macaroni pasta
 - 1 1/2 cups heavy cream
 - 2 1/2 cups shredded mild ( or sharp) cheddar cheese
 - 1 1/2 cups mozzarella cheese
 - 4 to 6 slices provolone cheese
 - 6 to 8 oz softened cream cheese
 - 1 cup grated parmesan cheese
 - 1 cup blue cheese crumbles
 - 1/2 cup chopped fresh parsley
 - 2 tbsp butter
 - 2 cups flour
 - 1 cup cornstarch
 - 2 beaten eggs
 - 1/2 ranch seasoning packet (optional)
 - Your favorite frying oil ( Recommendation: Canola Oil or Vegetable Oil)*
 
Sauce Ingredients:
- 1 1/2 cup of Frank’s Buffalo sauce ( or a sauce of your choice)
 - 2 tbsp butter
 - Garlic & Herb Spice Blend ( GH)
 - Three Tears Spice Blend
 
Now let's get cooking...
- Clean shrimp and pat dry
 - Season shrimp with 1 tbsp “MB” and 1 tsp “TT” spice blends. Refrigerate for 30 minutes.
 - Add 1 tbsp of “MB” spice blend to boiling water and cook pasta until Al Dente, following instructions on packaging.
 - Preheat oven to 350 degrees.
 - In a cast iron skillet , melt butter at a low-medium heat.
 - Add heavy cream and stir constantly
 - Fold in all cheeses and cream cheese , except parmesan cheese and 1 cup of cheddar cheese ( set aside for topping).
 - Stir until the mixture is evenly combined
 - Season cheese sauce with 1 Tbsp each of “FB” and “GH” spice blends. Taste and add additional if needed.
 - Fold in cooked pasta ( Add the pasta in parts , ensuring the mixture remains slightly loose and creamy. Add less pasta if needed)
 - Sprinkle remaining cheddar and Parmesan cheese over mixture. * If you are not using a cast iron skillet , transfer the mixture in an oven-safe dish before completing step 11.
 - Lightly coat with “TT” spice blend
 - Bake Mac & cheese for 20 to 30 mins , or until golden brown crust begins to form on top ( Be careful not to overcook as it will dry out )
 - In a container, combine flour and cornstarch.
 - Season breading mixture with 1 tbsp each of “TT” and “MB” seasoning blends. * Optional: Add 1/2 pack of ranch seasoning
 - Dip marinated shrimp in flour mixture , then in the beaten egg , then in the flour mixture once more . Make sure the shrimp are evenly coated
 - In heated oil , fry shrimp until golden brown
 - In a saucepan, melt butter and add buffalo sauce
 - Lightly season buffalo sauce with “GH” and “TT” blends.
 - Allow mixture to simmer for 1 minute.
 - Toss fried shrimp in buffalo sauce
 - Place coated shrimp on top of the Mac and cheese.
 - Garnish with blue cheese crumbles and fresh parsley
