What you'll need:
- 4 Tbsp - Earl’s Gourmet BBQ Spice Blend
- 1.5 Tbsp - Earl’s Gourmet Hey Unc Coffee Rub
- 1.5 Tbsp - Earl’s Gourmet Master Blend All Purpose Spice
- 1lb - Boneless, skinless chicken breast or thighs
- 1/4 Cup - Yellow Mustard
- 1qt - Heavy Cream
- 1lb – Cream Cheese – soft – cut in small cubes.
- 1/4 Cup - Fresh chopped Italian Parsley
- 1/2 cups – chopped green onions
- 2 cups – shredded parmesan cheese.
Preparing The Chicken
Clean Chicken Breast or thighs then pat dry. Season chicken with 3 tbsp of BBQ Spice, 1- Tbsp of Master Blend Spice, and 1/4 cup of yellow mustard. Let rest in fridge for at least an hour. For maximum flavor let it marinate for a few hours.
Heat grill or oven to 400?F. On medium0high heat, grill or broil for 6 to 7 minutes per side. Depending on the thickness of the meat or until internal temperature in the thickest part of the breast or thigh reads at least 165?F. Remove chicken let rest for 10 minutes then cut into bite size cubes and reserve in bowl.
Preparing The Cheese Dip
Take your 1 qt of heavy cream, 8 Tbsp of flour, and 8 Tbsp of butter. In a medium size saucepan/pot over medium - high heat add butter and melt. Whisk in the flour and slowly add the heavy cream then the cheese a little at a time until melted. Reduce temperature to low then add remaining spices, green onions and reserved chicken. Heat thoroughly to 160° F.
Fold in fresh parsley then serve in desired dish. Enjoy!
